Would you believe there are 14 dinners and 24 muffins in this freezer?
Last week I did another round of freezer cooking. Here is what I did:
BBQ Meatballs
Regular Meatballs
Pantry Pork Chops x2
Chicken Alfredo Pasta Bake x2
I'm not ready to pass along the meatball recipe...I'm not sure how they turned out. They seemed a bit dry to me. The Pantry Pork Chops are from Weber's Big Book of Grilling.
It is a simple (but yummy) marinade using soy sauce, lemon juice, and fresh rosemary. I would highly recommend the cookbook. Everything we've made from it is delicious. The Chicken Alfredo Bake is my own concoction. I mixed whole-wheat penne pasta, a jar of alfredo sauce, bacon bits, peas, and mozzarella cheese together. Sprinkle more cheese on top. It's super yummy and would be easy to tweak...mushrooms would be really good in it.
The banana chocolate chip muffins are good, but not as good as the pumpkin chocolate chip I made last month. I can't pull a banana muffin straight from the freezer and eat it like I could with the pumpkin. They are too hard...probably because the pumpkin ones had more oil in the recipe???
